Maintain sanitation standards in all kitchen operations, kitchen equipment, and facility cleanliness. Train new back of house personnel.  Oversee kitchen cleanup crews.


  • Maintain sanitation and cleanliness standards in all kitchen and food service facilities, including back docks and kitchen equipment. 
  • Assist in conducting weekly Food & Beverage Orientation and train new kitchen personnel in standards of safety, sanitation equipment usage and cleaning.
  • Schedule, train and oversee night kitchen cleaning crews.  Ensure cleanup work is completed on time and to sanitation standards.
  • Conduct and maintain records of routine sanitation inspections of all kitchen and food service facilities, rate discrepancies, assign abatement personnel and follow up with Kitchen Manager and Executive Chef.
  • Work closely with vendors on ordering of all personal protective equipment for kitchen personnel and facility cleaning supplies as well as preventive maintenance schedules on dish machines and other assigned kitchen equipment.
  • Communicate with all department management personnel regarding sanitation and cleanliness issues.
  • Assist with month end inventories as directed by Executive Chef or Food & Beverage Director.
  • Maintain sanitation standards in accordance with NPS and Public Health Service sanitation guidelines at all facilities.  Participate in inspections at request of Executive Chef. 
  • Maintain Safety Data Sheets (SDS) and books for all kitchen facilities.
  • Oversee the pest elimination program throughout all Food & Beverage Units.
  • Schedule and inspect the work of the cleaning vendors.
  • Establish and review daily, weekly and special cleaning schedules for the stewarding staff.
  • Monitor portion control in all units.  Assure that all food handlers meet or exceed departmental weight specifications.
  • Meet with Kitchen Managers and Executive Chef to ensure that employees receive continual unit training, understand the standards of their position and what skills are required to attain the next level.
  • Ensure that assigned staff is adhering to risk management procedures, including wearing personal protective equipment, SDS location and comprehension and ergonomics.
  • Work a varied scheduled to include first, second and third shifts.
  • Other duties as assigned.


  • Minimum three years Kitchen Steward experience or two years’ experience in Lead Cook or Front of House supervisory position.
  • Successfully completed Serve Safe sanitation program.
  • Ability to train entry level employees in proper, safe and efficient use of kitchen equipment.
  • Ability to supervise cleaning crews in multiple locations with concerns to productivity and labor cost controls.  Address performance issues as needed. 
  • Good written, verbal and analytical problem solving skills, plus basic accounting skills.
  • Knowledge of and experience in the use of dish machines, pot machines, jet sprayers and other kitchen equipment as well as the ability to conduct minor maintenance on such equipment.
  • Ability to understand, apply and stay current with sanitation standards and codes in kitchen areas. 
  • Ability to understand and apply SDS to kitchen operations, and ensure safe use of all cleaning compounds used in kitchen facilities.
  • Possess or obtain a valid Arizona Driver’s License and comply with Xanterra South Rim Company Vehicle Policy.
